Dining aboard Seven Seas Explorer is not built around a single marquee restaurant. The pleasure comes from moving among distinct rooms and styles while knowing that the specialty venues are included in the fare.
How specialty dining works
Chartreuse, Pacific Rim and Prime 7 require reservations. They carry no separate cover charge, but capacity is limited. Sette Mari at La Veranda is an open-seating Italian venue in the evening, while Compass Rose is the flexible main restaurant and does not require a reservation.
Reservation timing and entitlements can vary by suite and sailing. I recommend identifying the experiences that matter most, then reserving as soon as the applicable window opens.
Chartreuse
Chartreuse is Explorer’s French restaurant, combining a polished room with modern presentations of French classics. It felt suited to an unhurried evening—more refined than theatrical. Travelers who enjoy attentive pacing and composed plates are likely to appreciate it most.
Pacific Rim
Pacific Rim may be the most visually memorable specialty venue aboard Explorer. Its pan-Asian menu and dramatic design create a clear sense of occasion. It was also the restaurant that felt most different from a conventional cruise-ship dining room.
Prime 7
Prime 7 delivers the familiarity of a classic American steakhouse: substantial cuts, seafood, traditional accompaniments and a club-like setting. It is an easy choice for a celebratory dinner or for anyone who values a perfectly paced steakhouse meal.
Sette Mari at La Veranda
In the evening, La Veranda becomes Sette Mari, serving Italian specialties with open seating. That distinction is useful: Sette Mari is a named dinner experience, but it does not operate like the three reservation-required specialty restaurants. We enjoyed having an appealing evening option that did not require the same advance planning.
Compass Rose
Compass Rose is the ship’s signature main restaurant and the most versatile dining room. Its broad menu made it useful when we wanted flexibility rather than a themed evening. It also provided an important benchmark: the everyday restaurant felt considered enough that specialty dining did not seem like an escape from the main room.
Which restaurant should you prioritize?

I would not skip Compass Rose simply because the specialty venues attract more attention. The better strategy is to experience the variety. Dining is one of the reasons Explorer works well for travelers who enjoy a smaller ship but do not want a repetitive evening routine.
